Primal Eating: Homemade Spaghetti Sauce

What makes this spaghetti sauce even better is that the majority of the ingredients are from the garden!  My husband found this recipe over a year ago and it continues to be our favorite.

Cut the tops off several tomatoes.  Drizzle with olive oil, salt, and pepper.  Roast in the oven on 350 for 2 hours. 
Put fresh basil and garlic in the food processor.  Add the roasted tomatoes.  Blend together
In a large pot saute a chopped onion with olive oil.  Once the onions are soft, add the tomato mixture.  Simmer on low for about 20 minutes.  Your house will smell amazing and you can't beat the taste with any store bought brand!
You can store this in the refrigerator up to a week or the freezer for a couple of months.  If you want it to last longer, you can go through the canning process.  In our house, food doesn't last that long. :-)
